يتركّز الاهتمام البحثي على دراسة الخصائص الكيميائية للمكونات الغذائية المختلفة (مثل البروتينات، الدهون، الكربوهيدرات، الفيتامينات، المركبات الفينولية، والأنثوسيانينات)، وفهم التغيرات التي تطرأ عليها أثناء عمليات التصنيع، المعالجة، والتخزين. كما يشمل الاهتمام تحليل التفاعلات الكيميائية التي تحدث في الأغذية مثل التزنخ، التفاعلات غير الإنزيمية (مثل تفاعل ميلارد)، وتأثيرها على الجودة والسلامة والقيمة الغذائية.
يتضمن الاهتمام البحثي أيضاً استخلاص المركبات الفعالة بيولوجياً من المصادر النباتية وتوصيفها باستخدام تقنيات تحليلية متقدمة، مع التركيز على التطبيقات الصحية والوظيفية لهذه المركبات في الأغذية
